Rain Gong is brand manager of Xia Bu Xia Bu in China who have over 1000 restaurants in China.

She tells us about the hot pot culture in China and which NZ products go down well with their ever-changing consumer base.

In 2019 Xia Bu Xia Bu opened a new concept restaurant in the Shanghai tower which experiments with more traditional Chinese elements and a new menu.
